Yesterday evening, I learned a very important lesson. If you are baking something, getting the correct pan size is very important. You might think it will be annoying to make a 6/7ths recipe of something, but things could be worse. It will be even more annoying when your clafoutis takes two hours and fifteen minutes to bake because you put it in a 6 cup baking dish instead of a 7 cup dish.
I was using this recipe and substituting a couple handfuls of blueberries for one of the peaches. That worked just fine. I love the combination of tart blueberry and sweet, juicy peach. I ran into trouble when I decided I could just use a 1.5 quart baking dish instead of reducing the recipe or going to buy a 2 quart dish. The batter all fit quite easily into the smaller dish, but the clafoutis took forever to bake. Worse, it baked unevenly. The outside ring was a bit too firm and the center was still pretty soft. It didn’t taste bad, but it certainly wasn’t as good as the last one I made.
Oh well. Lesson learned. Next time, I’ll make a slightly smaller recipe.
